Mongolian Beef

Ingredients

Beef marinade

  • 312 g11 oz beef (New York steak or flank steak)
  • 5 ml1 tsp baking soda
  • 15 ml1 tbsp cornstarch
  • 30 ml2 tbsp water
  • 15 ml1 tbsp oyster sauce
  • 5 ml1 tsp soy sauce
  • 5 ml1 tsp tamari soy sauce
  • 1 ml1/4 tsp white pepper powder
  • 15 ml1 tbsp oil (pre-cooking)
  • 15 ml1 tbsp cornstarch (pre-cooking)

Stir Fry Ingredients

  • 1 medium1 medium onion (red or white)
  • 5 stalks5 stalks scallions
  • 2 cloves2 cloves garlic
  • 1/21/2 red bell pepper
  • 1/21/2 green bell pepper
  • 44 dried chili pepper

Sauce

  • 15 ml1 tbsp oyster sauce
  • 15 ml1 tbsp soy sauce
  • 2 ml1/2 tsp tamari soy sauce
  • 2 ml1/2 tsp chili sauce
  • 4 g1 tsp sugar
  • 15 ml1 tbsp cooking wine

Cooking

  • 85 g3/8 cup oil (for frying)
  • 15 ml1 tbsp sesame oil

Instructions

  1. 1 Trim beef of any white gristle, then cut against the grain into thin slices. Rinse beef with cold water to remove red myoglobin, then drain. In a bowl, combine baking soda, cornstarch, water, oyster sauce, soy sauce, tamari, and white pepper powder. Squeeze excess water from beef and mix into marinade until absorbed. Meanwhile, slice onion into 1/4-inch pieces, chop scallions into 1-inch pieces (separating whites from greens), mince garlic, and cut bell peppers into strips.
  2. 2 Make sauce by mixing together oyster sauce, soy sauce, tamari, chili sauce, sugar, and cooking wine in a small bowl. When beef has absorbed all marinade, mix in 1 tablespoon oil to seal in flavors, then add 1 tablespoon cornstarch for crispiness.
  3. 3 Heat wok on high heat until just smoking. Add 1 oz oil and swirl to coat, then add remaining 2 oz oil and heat for 1 minute. Add beef and fry for 1.5 minutes until cooked through and crispy. Remove beef and drain oil, reserving most oil for other uses but leaving small amount in wok.
  4. 4 Return wok to high heat and add garlic, dried chilies, onion, scallion whites, and bell peppers. Stir-fry for 1-1.5 minutes until fragrant. Add beef back and stir-fry 20 seconds. Add sauce and scallion greens, stir-fry 30 seconds more, then turn off heat. Drizzle with sesame oil and toss to combine. Taste and adjust seasoning before serving.

Notes

Cut beef against the grain for tenderness. Oil is added to marinated beef just before cooking to lock in moisture and flavors. The beef is cooked in two stages - first fried until crispy, then briefly stir-fried with vegetables to avoid overcooking.
